This lunch recipe is a quick, healthy, and oil-free option. This dish can be used as part of meal prep for a hectic week ahead. With brown rice, turmeric, and herbs and spices, this dish is sure to satisfy your hunger and maintain health.

  • 1 large, minced shallot
  • Fresh ginger to taste
  • ½ teaspoon of turmeric powder
  • ½ teaspoon of ground cumin
  • ½ teaspoon of chili powder
  • ½ cup of brown rice
  • 1 cup of vegetable broth/chicken broth (your choice)
  • Quarter cup of cooked drained and rinsed black beans
  • Quarter cup of cooked corn

  1. Heat 2 tbsp of water in frying pan. Place over medium heat.
  2. Cook minced shallot and ginger for 1-2 minutes.
  3. Add in brown rice, turmeric powder, ground cumin, and broth of choice to a boil.
  4. Once the mixture has come to a boil, lower heat and cook for 30-40 minutes on low heat.
  5. After 30-40 minutes, add in beans and corn. Mix in corn and beans evenly covering them with the rice mixture.
