Air-Fried Stuffed Bell Peppers

Air-fried stuffed bell peppers are a great way to get in your protein.

  • 3 bell peppers
  • 250 grams lean ground chicken/beef/imitation meat
  • ½ cup black beans
  • ½ tbsp olive oil
  • 1/4 cup green onion diced
  • 1/4 cup fresh parsley
  • 1 tablespoon red chili powder
  • ½ tablespoon cumin
  • ½ tsp garlic salt
  • 1 cup cooked rice

  1. Warm up a medium sized skillet with olive oil. Cook meat with chilli powder, cumin, garlic, green onion, and salt to taste. Cook ground meat thoroughly for 8-10 minutes.
  2. Add in cooked rice, black beans and parsley. Stir, coating the mixture evenly. Simmer for 3 minutes to let mixture coat evenly.
  3. Cut the top off of each pepper and clean the seeds out.
  4. Scoop the mixture into each of the peppers and place in the basket of the air fryer.
  5. Cook for 10 minutes at 350 degrees.
