Fish Tacos

Fish tacos are a great lighter alternative to traditional beef. Catfish is a healthy fish choice, but other types of fish available in your local area can be used instead.

  • 2 pounds fish, cut into strips
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup white cornmeal
  • 1/4 cup canola oil
  • 8 6-inch corn tortillas
  • 1/4 cup fresh cilantro, chopped
  • 1 cup tomato salsa (see main menu)
  • 1 cup lettuce, shredded

1. Season the fish strips with salt and pepper and coat with cornmeal. Pan fry in canola oil until done.
2. Warm the tortillas. Place some of the cooked fish on each tortilla. Top with salsa, cilantro and lettuce. Fold tortillas in half and serve.
